Head Chef - Leading Independent Scottish Hospitality Group

The Role

As Head Chef, you'll be the driving force in the kitchen - leading from the front to ensure smooth service, outstanding quality, and a memorable guest experience every time. You'll have the freedom to create fresh, seasonal menus that celebrate the best of Scottish produce, while managing costs, leading your brigade, and upholding the group's high standards.

Key Responsibilities

  • Lead and inspire a skilled kitchen team to deliver consistent, high-quality dishes
  • Design, cost, and implement menus featuring fresh Scottish ingredients and seasonal produce
  • Oversee all kitchen operations, ensuring efficiency, consistency, and compliance
  • Manage budgets, GP, and labour controls in collaboration with the General Manager
  • Maintain strict food safety, hygiene, and allergen compliance (CookSafesystem)
  • Ensure effective stock control, purchasing, and supplier management
  • Train, mentor, and develop your team to achieve excellence every day

About You

You're a passionate, hands-on chef who thrives in a fast-paced, dynamic environment. You take pride in producing quality dishes from scratch, leading by example, and inspiring your team to deliver exceptional results.

Essential Experience & Skills:

  • Proven experience running a high-volume kitchen operation
  • Strong menu development and costing knowledge
  • Excellent leadership, organisation, and communication skills
  • Solid understanding of GP management, ordering, and stock control
  • Experienced with CookSafeand food safety compliance
